Breakfast Creation: Smoothie French Toast

Today I decided to experiment with a new breakfast creation. Is it healthy? Well, I'm considering it healthy but we all have our own perspective on what "healthy" is, so I'll let you decide. Healthy or not, it looks pretty darn good so I had to share. For the record, I did log the items in my Noom meal logger (yes, I just signed up for Noom, but I'll save that discussion for another blog!) and this breakfast delight is 503 calories, a beautiful and hearty breakfast for a weekend treat!



Ingredients:

1 Can of Coconut Milk

1 Lime

1 Medium Banana

1 Cup of Fresh Berries

3 Ice Cubes

1 Slice of Bread, I'm using 7 Grain Iggy's


Directions:

Place the coconut milk in the refrigerator for a few hours or overnight. This allows the liquid to separate. When you open the can you'll notice a hard substance on top with liquid on the bottom.


Scoop out the solid white contents into a bowl and set the liquid aside.

Squeeze your lime onto the white solid coconut milk and begin to stir creating almost a whip cream consistency. If your coconut milk is too hard or thick, pour a bit more of the coconut milk liquid into the bowl to make it easier to stir.


Separately, in a blender, add your 1 cup of fresh berries, 3 ice cubes (you could also opt for frozen berries and skip the ice!), pour in the remaining liquid coconut milk, and blend until smoothie-like.


Put your bread into the toaster or broiler until it is nicely warm and toasted.


Assembling:

Now for the fun part! Putting it all together. On a plate, place your toast, top with a few spoonful's of your berry smoothie, add your dollop of coconut cream, and top with fresh sliced banana! Voila!
